  1. Thank you for this video. Living up north in Central California and zero Asian markets like I had in Southern California and New York. So it is a challenge to get what was so easy growing up in suburbs of New York and Los Angeles. I Googled substitutes for the finger meat, and went online to get those disposable spice bags. I am in my 80's and was done with daily cooking a few years ago. My current go to is Pork Pozole which lasts 5-6 servings for one. Your recipe is next as I am craving Asian flavors, and no pressure cooker at this end so it's either my slow cooker or stove pot. I will check out your cookbook next.   2. I made a close version of this tonight, as I didn’t have star anise, rice wine, or chu hou (they are now on my grocery list for round two). Used a bit of ground cinnamon, brown sugar rather than crystalized, hoisin & gf soy sauce, and it was still DELICIOUS. I can’t wait to try it with all the ingredients!
