15-minute chorizo carbonara by @brandongouveia is a perfect blend of creamy, savory, and slightly spicy, creating a comforting yet exciting meal that comes together quickly.
INGREDIENTS
½ pound spaghetti
1 whole large egg
2 large egg yolks
2 cups pecorino, finely grated
1 tablespoon olive oil
1 cup chorizo, diced
3 garlic cloves, minced
1 teaspoon freshly cracked black pepper
1 teaspoon smoked paprika
Chopped parsley, for garnish
salt, to taste
PREPARATION
1. Bring a large pot of salted water to boil and add spaghetti and cook until al dente according to package directions. Before draining, reserve some of the pasta water.
2. In a bowl, mix together the whole egg, egg yolks, pecorino and black pepper until evenly combined. Set aside.
3. Heat olive oil in a large non-stick skillet over medium-high heat. Add chorizo and garlic and cook for 3 minutes, until the chorizo begins to get crispy.
4. Turn off the heat then add cooked spaghetti, a ladle of pasta water, the pecorino and egg mixture, and the smoked paprika. Use tongs to toss until evenly combined and the pasta is creamy.
5. Plate it up and garnish with more pecorino and chopped parsley.
6. Enjoy!

This is not Chorizo. Chorizo is ground up and mushy. Maybe there is a meat type mimicking it like Linguicia. Portugese people eat Chaurice a similar tasting SAUSAGE. Great idea.

I have eaten a lot of Carbonara dishes before and might have to try this at some point. The Chorizo is a nice touch because it adds a lot of flavor.
