So glad that ATK is waking up to the fact that foods cooked in animal fats are far superior to those cooked in the highly processed industrial seed poison….I mean oil.
I love lard! I got about a litre of the stuff last year when I made chicharon from skin that my butcher gave me. Everything I fried and cooked in that lard was delicious!
I love carrot fries. I wonder how much better they would be fried in lard… mmmm.

This looks wonderful! But I wonder what to do with all that fat (veg oil or lard) afterwards. Can you strain it and keep in the fridge? (My mom would do that with her “french fry” oil and use it again a couple of times and the fry’s were always better using the older oil!) If so, how long?
If I fry, it's in lard. I like to get my lard from a meat processing shop out in the country. Tastes 100 times better than grocery store lard, Chicken (with milk gravy) and pie crust, etc etc.
Way over here on the west coast, I use lard in tortillas and tamales. It's good in pie crust, mixed 1/2 and 1/2 with butter. I think this sweet potato thing sounds wonderful.
Undeniably this would be delicious. But with 2 diabetic parents I'm going to pass.

I've had these, but the sweet potatoes were precooked. The people doing it said it is easier to get a complete cook without burning the potatoes. It also takes much less time in the oil. They also used coconut oil. The flavor was amazing. I'm gonna have to try it like this to see which way I like them best! Great video!
How do you store the used lard, how many times can it be reused and for how long?

Won Ton wrappers. Cut into strips then dressed similarly to your sweet potatoes. Sugar, salt and instead of vanilla…sesame oil. Best crispy chips ever

Awesome! Here in the midwest, many restaurants are frying french fries in lard. They charge $1.50 – $2.50 extra. Definitely worth it every once in a while. Very good taste, etc. 👍 🥔

Brian, that looks delicious. My Hungarian grandmother used lard exclusively. Veal cutlets fried in lard. Pie crust made with lard. Oh what fond memories!
I thought there were no health benefits to lard! But let’s face it, you can’t go wrong with sugar, cinnamon and vanilla!!
And what they've found is that lard and tallow (beef grease) are the healthy fats. When the world believed the lie that vegetable oils were healthy and animal fats were poison, cancer and heart disease EXPLODED. We have researchers such as Ansel Keys to thank for that one. Corn oil, soybean oil, canola oil, cotton seed oil are all very unstable especially when heated and go rancid very quickly. Rancid oils are carcinogenic. Animal fats are much more heat tolerant and so they stay healthy even at higher temperatures. "Respect the oil" should be our watchword.
