That dough is way too moist. You need quite a bit more flour.

I made this for just me and the misses 2 cups of flower and 3 fresh eggs, bing bong pasta. Same as Claire's but not as pretty.

I must say, that the only issue I have with you was the constant handling of your hair while preparing your pasta. Very unsanitary indeed.
A year later I came back to this video and I realized there’s a bug crawling into Claire’s flour . You can see it at 1:27– 1:30 on the right side of the flour
I don't get it. She says 8oz flour and 4 eggs and 10 yolks.? What? I don't see how those measurements are correct

Pasta is healthy in moderation, ask any Italian. Mediterranean’s eat pasta all the time.! Using a food processor is way easier by the way and more people would attempt making it. You should drain the ricotta in a fine sieve colander overnight. Makes a better filling.
