My coconut cream pie. With a coconut flour crust and a few simple ingredients, this recipe is the perfect sweet treat for those of you out there with nut allergies or for anyone craving a cool, low carb, tropical dessert. A wonderful keto dessert recipe.

Crust Ingredients:
• 9 inch pie dish
• 1 cup – coconut flour
• 2 eggs, lightly beaten
• 1 Tbs – coconut oil
• 1 tsp – vanilla extract
• Powdered sugar sub. = to 1/4 cup reg. sugar
• 1/4 tsp – salt
• 8 Tbs – unsalted cold butter, cut into cubes

Filling Ingredients:
• Powdered sugar sub. = to 1 cup reg. sugar
• 1/4 tsp – xanthan gum
• 1/4 tsp – salt
• 1 can – unsweetened coconut milk
• 1 can – unsweetened coconut cream
• 4 – egg yolks
• 1 Tbs – vanilla extract

Toping Ingredients:
• 1 cup – heavy cream
• Powdered sugar sub. = to 2 Tbs reg. sugar
• 2 Tbs – toasted unsweetened coconut flakes

Per serving (recipe divided by 8):
474 calories / 43.51g fat / 6.97g net carbs / 6.90g protein

  1. Tried just the filling today to cut down on carbs and calories. I've always thought adding yolks to a cream would make it more luscious and it's true. I am glad for the coconut cream and milk to cut down on things and I even used just about a tablespoon or so of allulose. It was really good thank you. 😊

  2. I finally made this pie after reading all the comments and reviews and it tastes delicious. I avoided ending up with egg drop soup by lowering the temperature when adding the eggs, and simmering a bit longer after I dropped in the eggs. I also added a tad bit more xantham gum. Two challenges was I did have left over filling and I used all the dough so my crust was thicker than necessary. I did add shredded coconut to the filling to boost the coconut flavor. In my opinion the crust did not have much flavor, perhaps I should have added coconut extract to the crust🤔. Overall very nice keto dessert.

  3. Question made the pie yesterday followed your directions it coated my spoon as the video this morning was set a little bit still a little liquid what do I do keep in fridge longer or what?! Is already in the pie crust so not sure taking it out cooking again and poring back on the crust is a solution? Unless is make a brand new crust?
