Coffee Cake with Osmo x Chamberlain Coffee Salt

Ingredients
Streusel
2/3 cup gluten free flour (or all purpose)
2/3 cup brown sugar
2/3 cup finely chopped walnuts or pecans
1/4 tsp salt
1 tsp cinnamon
5 Tbsp melted butter

Cake
2 cups gluten free flour (or all purpose)
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 1/4 cup yogurt or sour cream
1 tsp vanilla extract
2 eggs
1 cup sugar
4 Tbsp softened butter

Process
Preheat oven to 350 f

For the Streusel.
In a mixing bowl, combine flour, sugar, nuts, cinnamon and salt. Then, stream in butter while mixing. Once crumbly, set aside.

In a mixing bowl, combine flour, salt, baking soda and baking powder and set aside.
Then, in a separate bowl, combine yogurt and vanilla and set aside.

In a bowl of a stand mixer, mix butter and sugar until fluffy. Then, add eggs one by one until combined. Next, add flour and yogurt mixtures alternating until combined. Then pour batter into a greased 9 x 13 inch pan. Next, top with streusel and bake for 30-35 minutes or until a toothpick inserted comes out clean.

Remove from oven and sprinkle with Osmo’s coffee salt if desired. ( I used Caramel salt)
Cool slightly and serve warm with coffee or beverage of choice.
