This is the best video on steamed eggs I've found.
I prefer pee wee eggs because I LOVE the yolk to white ratio. I want way more yolk than large can deliver.
Love this- as always now I have to try these myself. Thanks, ATK! I will take issue with the notion that an egg carton does anything to the temperature of an egg. The carton is inert and uses NO energy, therefore it can't source or sink heat (i.e. affect the temperature). Put another way, the carton is just a container.
Brilliant video, although cracking your eggs into bowls is an absolute waste of kitchenware and washing up time, just crack them straight into the pan and do it quickly

who eats a crispy edged egg. yuck. when I see a crispy edge, I think the cook doesn't know how to cook. I think a great cook does over easy eggs picture perfect, flipped and plated like on a magazine cover.
These are basted eggs. The best style of cooking eggs.
I love a good fudgy egg! When I lived in the UK we called it fudgy.
My grandmother also used cast iron for those lazy eggs and I do as well. 🙂
My grandmother used to make the most delicious Lacey fried eggs I ever had! That came from using quite a bit of fat.
Due to my disabilities I now cook eggs in my air fryer and they are the most delicious eggs I have ever made! I can easily control the temperature where I can't necessarily on the stove and I can't see into the pan on the stove.
I like over well.
