That is one scrumptious looking brisket and has nice smoke ring too. Nice job.
Leaving the all that thick fat extends the cook time, keeps the smoke from reaching the top of the meat and looks really disgusting when serving.

Great video, shown nice and simple like with clear instructions. I discovered the overnight method like that a couple of years ago, and it is a game changer for sure! Beautiful smoke ring, and juicy flavor, along with a nice bark, what more could you ask for? I have never seen someone not trim the fat before though, that was a surprise.
