  1. Braised Beef Short Ribs

    3 pounds boneless beef short ribs
    salt & pepper
    2 tablespoons avocado/olive oil
    1 ½ cups onion, diced
    ¼ cup beef broth
    ¾ cup celery, diced
    ¾ cup carrot, diced
    3 tablespoons tomato paste
    2 cups dry red wine (Cabernet Sauvignon, Merlot, Pinot Noir)
    4 cloves of garlic, minced
    3 cups of beef broth, warm
    Bouquet of fresh parsley and thyme
    2 bay leaves
    1 tablespoon cornstarch
    ¼ cup cold water

    Remove short ribs from the package and cut into large chunks. About 3 per strip
    Salt and pepper the ribs liberally on both sides.
    In a heavy bottomed pot, over medium heat add 2 tablespoons of avocado or olive oil.
    Brown the beef in batches on all sides. Remove beef ribs from the pot and set aside.
    Reduce the heat to medium low, and add one and a half cups, diced onion.
    Add ¼ cup beef broth to deglaze the fond (brown bites).
    Sauté the onions over medium low heat until softened, about five minutes, stirring often.
    Add in celery & carrots and sauté for about three minutes, stirring continuously.
    Add in 3 tablespoons of tomato paste. Sauté the tomato paste for one minute stirring continuously.
    Add and 2 cups of a dry red wine like a (Cabernet Sauvignon, Merlot, or Pinot Noir)
    Bring to a simmer and allow alcohol to evaporate about 5 minutes.
    Add in 4 cloves of minced garlic. Stir for about 1 minute.
    Add beef short ribs back into the pots along with pan juices.
    Add in 3 cups of warm beef broth.
    Add in a bouquet of fresh parsley in time along with two bay leaves and bring to a simmer.
    Add a piece of parchment (cut to the size of the pot). Securely lay it on top of the broth and beef. Add a lid on top of the pot and place it in the oven at 275° until the meat is super tender, about four hours.
    Remove beef to a separate bowl and cover with plastic wrap, refrigerate overnight.
    Strain gravy from vegetables in a separate bowl and cover with plastic wrap, refrigerate overnight.
    The next day, remove fat from the top of gravy and pour into a sauté pan.
    Add in the beef ribs and simmer over medium low.
    Make a cornstarch slurry with 1 tablespoon cornstarch and ¼ cup of cold water and add it to the sauté pan.
    Bring to a gentle boil, about one minute, turning to coat all the pieces of beef. Place a lid on the pan and remove from heat to keep warm.
    Notes
    Serve with risotto alla milanese (look up recipe) and a green salad. 

    Risotto Alla Milanese
    (Arborio rice cooked in stock with Saffron)

    3 cups salted water
    1 tablespoon unsalted butter
    2 tablespoons olive oil
    ½ cup onion, diced
    1 cup Arborio rice
    pinch of saffron soaked in 2 tablespoons of hot water.
    ¾ cup white wine (Pinot Grigio, Sovereign Blanc, unoaked Chardonnay)
    4 tablespoons unsalted butter
    ¼ cup graded, Grana Padano cheese (parmesan Reggiano or pecorino Romano can be substituted)

    Heat 3 cups of salted water to a boil and reduce to a simmer.
    In a sauté pan add 1 tablespoon of butter and 2 tablespoons of olive oil.
    Add in onion and sauté. About five minutes until soft, stirring often.
    Add in Arborio rice. Toast for two minutes, stirring constantly.
    Add in saffron water.
    Add in a ¾ cup white white with high acidity.
    Simmer until all the alcohol is evaporated, stirring often
    Start adding the simmering water,½ cup at a time. Continue to stir often, and cook until the rice absorbs most of the water.
    Add a ½ cup of water, continue cooking in this manner until the rice is al dente, about 18 to 20 minutes.
    Remove from heat and add 4 tablespoons of cold, unsalted butter, in 2 additions.
    Stir in cheese
    Serve with beef short ribs, place gravy on the bottom, risotto, and top with a short rib or two.
    Notes
    Saffron is very expensive, so only a few threads are needed.

  2. Beautifully cooked and plated. I would top off that pretty plate with a dash of color from one or more of the ingredients from either the Braising Sauce or the Risotto. A thin sliver of the Grana Padono cheese with a sprig of parsley and a sliver of the Saffron. WOW! What a treat of a dish!! Thank you for sharing. 👏 😊❤

  3. I watched this from start to finish and all I can say. Why have I never gone to Costco?! But who is this person creating these meals?! BTW! I preferred BJ's for the fresh deli and the cheep gas. But there is only one Costco in my city and it is crazy crowded! I Mean CRAZY CROWED!

  4. Looks delicious, solid recipe and technique. I typically buy English style at my local grocery store when they are on sale, but they are choice — those looked like prime! I will have to look for them the next Costco run.
