3 pounds boneless beef short ribs

4 cloves of garlic, minced
3 cups of beef broth, warm
Bouquet of fresh parsley and thyme
2 bay leaves
1 tablespoon cornstarch

Remove short ribs from the package and cut into large chunks. About 3 per strip
Salt and pepper the ribs liberally on both sides.
In a heavy bottomed pot, over medium heat add 2 tablespoons of avocado or olive oil.
Brown the beef in batches on all sides. Remove beef ribs from the pot and set aside.
Reduce the heat to medium low, and add one and a half cups, diced onion.
Add ¼ cup beef broth to deglaze the fond (brown bites).
Sauté the onions over medium low heat until softened, about five minutes, stirring often.
Add in celery & carrots and sauté for about three minutes, stirring continuously.

Bring to a simmer and allow alcohol to evaporate about 5 minutes.
Add in 4 cloves of minced garlic. Stir for about 1 minute.
Add beef short ribs back into the pots along with pan juices.
Add in 3 cups of warm beef broth.
Add in a bouquet of fresh parsley in time along with two bay leaves and bring to a simmer.
Add a piece of parchment (cut to the size of the pot). Securely lay it on top of the broth and beef. Add a lid on top of the pot and place it in the oven at 275° until the meat is super tender, about four hours.
Remove beef to a separate bowl and cover with plastic wrap, refrigerate overnight.
Strain gravy from vegetables in a separate bowl and cover with plastic wrap, refrigerate overnight.
The next day, remove fat from the top of gravy and pour into a sauté pan.
Add in the beef ribs and simmer over medium low.
Make a cornstarch slurry with 1 tablespoon cornstarch and ¼ cup of cold water and add it to the sauté pan.
Bring to a gentle boil, about one minute, turning to coat all the pieces of beef. Place a lid on the pan and remove from heat to keep warm.
Notes
Serve with risotto alla milanese (look up recipe) and a green salad.

Mouth watering 😋
Could do the exact same with a chuck roast for $20. Don't be a dummy. Save your money.
Perfection! 👏🏼👏🏼👏🏼
Um, everyone knows to not to heat avacado oil….
This is NOT a 2025 demo! The package of meat shows its BB date as 2021!
Can't afford $50 for one or 2 meals😮
I add chicken broth in place of water. Great recipe !
Beautifully cooked and plated. I would top off that pretty plate with a dash of color from one or more of the ingredients from either the Braising Sauce or the Risotto. A thin sliver of the Grana Padono cheese with a sprig of parsley and a sliver of the Saffron. WOW! What a treat of a dish!! Thank you for sharing. 👏 😊❤
55$ that's terrible price
Too complicated
This is the best series of instructional cooking videos I’ve ever encountered. Clear instructions, recipes & visual examples of desired results. 5 stars out of 5.
Wish they carry those at Costco in Vegas! Have been looking all over for it!!!😢😢😢😢
I'm sure her food is tasty, but way too complicated and time consuming. A few steps could be eliminated, so you can prepare and eat it the same day.
Not only can I taste it, but it is simply a work of art. Thank you for sharing
Nice, but the cost of beef is criminally insane now. It's almost like cows are going extinct.
Like to see what you can do with that pork belly. Do you slice it for bacon?
I grew up very poor. My mother would find the cheapest cuts of meat and made delicious meals. Back in the 60s, short ribs were lest then $0.75 a pound! Now they are super expensive.
Forgot to serve vegetable 🙂
Delicious 😋 😊
Demasiado tiempo en el horno, tanta complicaciones… ese papel que agrega químicos a la receta. La verdad debe saber rica pero es una receta para un desempleado con mucho tiempo.
I watched this from start to finish and all I can say. Why have I never gone to Costco?! But who is this person creating these meals?! BTW! I preferred BJ's for the fresh deli and the cheep gas. But there is only one Costco in my city and it is crazy crowded! I Mean CRAZY CROWED!
I imagine spending the 20 hours makings this amazing dish just to have my 6 yr old look at it and say gross and asking for a hotdog 😅😮
Hey folks, don't be fooled. The so called short ribs are really a chuck roast cut up.
That's a lot of work, but it looks amazing and delicious!
New subscriber. Just one comment: Oh yeah
Love the parchment trick to minimize burnt on splashes.
Who the fuck has time to spend 2 days cooking 1 meal?
😲Oh my goodness, outstanding! These ribs were outstanding; so flavorful and tender. My wife gave them a rave review.
Thank you!!
Oh my! I would love to make this meal this coming autumn. Thank you for the inspiration.
Beef prices are ridiculous
Looks delicious, solid recipe and technique. I typically buy English style at my local grocery store when they are on sale, but they are choice — those looked like prime! I will have to look for them the next Costco run.
For the Americans tuning in, the price in Canadian dollars. Current exchange is .72.
So what is the purpose of the parchment paper?
I'm sorry but those wouldn't make it past the braise part with me they look tasty
Wow that’s one of the best YT cooking videos I think I’ve ever witnessed, def will be in my kitchen
