A simple and quick to make vegetarian pasta dish, that is healthy. This dish is healthy, as it is vegetable rich and contains less pasta, therefore less carbohydrate.
Pasta Primavera means Spring Pasta, usually relating to seasonal Spring vegetables. So the idea is to buy local seasonal fresh vegetables.
It is simple to make, as it’s cooked in one pan, aside from the pasta water, and the vegetables retain their firmness and freshness. Any leaked nutrients simply remain in the sauce. The best part is that it still feels like you are eating a huge pasta meal, but in reality, you’re consuming almost half a regular serve of pasta.
You can prepare everything by the time the pasta is cooked. So in 20 minutes, it’s ready! Enjoy my Penne Pasta primavera.

they always put the garlic in so early in these things… sure fire way to burn it and ruin the whole dish. i always fry everything up then turn the heat off before putting the garlic in so it cooks a little and infuses without burning at all

not vegetarian if you use Parmesan by EU rules (which contains animal rennet), but you should be able to find rennetless "parmesan" in certain stores. if not, sub a roughly 50-50 mix of toasted and smashed pine nuts and nutritional yeast.
unless you are diabetic, there is nothing unhealthy about carbohydrates and in fact carbs are the main source of energy your body needs; also, the vegetables replacing the pasta likely are mostly carbohydrate themselves (probably not fat or protein, but likely to be higher in fiber, which definitely is useful).
To make it even healthier you could use whole wheat pasta
