Country-Fried Pork Chops

Country Fried Pork Chops-Day 1 of cooking through my freezer in October!

Tonight I pulled out some pork chops I grabbed on sale for $1.59/lb. The only problem? Michael swears he doesn’t like pork chops. But we’ve been together 5 years, and I had to know… does he really not like them, or has he just never had GOOD pork chops?

So I made country-fried pork chops, smothered in homemade country gravy. He still claims he “doesn’t like pork chops”… but he also cleaned his plate. So who am I to judge? 😉

Here’s how I made it:

Pat each chop dry.

Mix flour with salt, pepper, garlic powder, onion powder, and paprika.

Whisk 1 egg with a splash of milk.

Coat each chop in flour, then egg mixture, then back in flour (double coating = extra crunchy).

Shallow-fry 3–4 minutes per side, until golden.

For the gravy: drain most of the oil, add a splash back in with some leftover seasoned flour, cook into a paste, then slowly whisk in milk until thick and creamy.

Season with salt + pepper to taste.

I served the pork chops over mashed potatoes, poured that country gravy right on top, with some canned green beans on the side. Cozy, comforting, and one less thing in the freezer!

  1. You can't blame people for an aversion to chops if they've never had good ones.

    Or even mediocre ones.

It really doesn't take 20 minutes to grill a steak or a piece of fish.

  2. He wasn't lying to you about not liking pork chops. Grown adults usually have a good handle on taste buds. You are just lucky enough to be with a polite individual who won't waste edible food. He seems to eat all of your other processed meat creations so I think we can give him the allowance of personal preference against pork chops.

  3. I’ve never cooked pork chops before, but was trying to figure out some wholesome meals to prep for my mother in law’s freezer and was so happy that you posted this! I had some broccoli and pre-made mashed potatoes for sides, but needed a meat and happened to have some pork chops from a hello fresh box. Followed this recipe and it was delicious! Thank you for this non-daunting recipe 😊
