INGREDIENTS
12 oz bacon (optional)
1 lb uncooked fettuccini pasta
salt for pasta water
CHEESE SAUCE
2 tbsp rendered bacon fat (or butter)
3 tbsp minced onion
2 cloves minced garlic
pinch of salt
(3) 12 oz cans evaporated milk (or half and half)
pinch of freshly grated nutmeg (optional)
1/4 tsp cracked black pepper
4 oz grated parmesan cheese
8 oz shredded mozzarella cheese

Whenever I make a dish that starts with bacon pieces, it's all over as soon as my toddler discovers it. It's like a little buzzard circling my bacon.

This is a VERY Americanized version of my countries βSPAGHETTI CARBONARAββ¦..a very popular and old dish from Italy.

Bacon, cheese, tomato – they do go together so well, and with any pasta. Leave the bacon fat in the dish after frying it up in chopped garlic and using butter as the cooking fat, and add a fresh salsa of chopped garlic, chopped chillies, and vine tomatoes, plenty of grated cheese and maybe macaroni a plenty, a one pan dish too, saves on the washing up. It wold be a pity not to add plenty of parmesan or similar grated cheese at the end, or when serving up – plus a good amount of seasoning, salt and black pepper, and some lemon juice. Like most pasta based meals, it goes down a treat, (even if you have no teeth left) and never gives you any kind of indigestion!

milk on it's own is too watery, true, but i found adding a little flour to it thickens the sauce up nicely~

I used pancetta instead of bacon. I didn't have mozzarella so I only made it with parmesan, but it came out great! Also, I tried it with half a tsp of korean chili powder but I didn't taste it. Next time I'll add more. Thanks for this recipe. My family loved it!

We only use turkey bacon so I really didn't have any bacon fat to use so I used butter and added a teaspoon of chicken bouillon, it was delicious. This one is going into our dinner rotation π

I came across your video and i was quite skeptical at first, using evaporated milk instead of cooking cream. But i dont have enough cooking cream, so i ended up using half evaporated and half cream! The result is amazing !!! Taste like expensive pasta in high end resturantsπ€£ thank you for the video!!
