A vegan pasta recipe made with coconut milk. Delicious creamy pasta recipe you can easily make even in one pot. This is similar to Alfredo sauce(white sauce) but lighter in texture compared.

INGREDIENTS:
-225g Pasta (using Rotini pasta, but you can use any kind)
-150g Broccoli, separate in to bite sizes
-200g Mushroom (using button mushroom, baby Bella. Also you can use any kind)
-1 medium size Jalapeño pepper
-1/2 medium size Onion chopped
-2 cloves Garlic sliced
-1 tsp Chili Flakes
-Salt per taste
-2-3 tbsps of Olive oil (you can substitute coconut oil for this)
-3/4 cup thick coconut milk (see below)
-2 cups of Pasta water
-2 tsp Corn starch mixed in 2 tbsps of water
**Coconut milk I am using is to thicker side, so I am adding 2 cups of pasta water to reduce the thickness. You can adjust this as you prefer. If you want the sauce more creamier use one and half cup of thick coconut milk with one cup of pasta water.
**If you are using milk from a fresh coconut, use the first squeeze and increase the coconut milk amount.As it is little lighter than what I am using, you might not even need to add pasta water when you use this.

Your pasta is overcooked (see how it sticks together). Your sauce is way too watery; it needed less pasta water and also more time on the oven to thicken up properly;. Also, you should always add your onion first to the pan, as they cook slower and are less likely to burn, and only after that add your garlic.

Can I use coconut cream instead of coconut milk .. if so shall I skip corn flour!!!
can i use the canned mushroom and elbow macaroni and add ham or pork giniling for not vegan? thank you for this.
Trying to be on a vegan diet for about 2 weeks and damn it's hard. Like you cannot use anything good in your dishes.
Great recipe but why add corn starch when coconut milk thickens?
I see a lot of people that make these type of dishes using the pasta water. Can it be optional? Can I just use coconut milk? Or does it taste differently with the pasta water?
