I have come up with this recipe and believe it is one of the best. This is a must-try recipe. This sauce is perfect over Steak, Chicken, Pies, and Vegetables, this recipe has a lot of versatility.

Makes – 2 12 Cups
Serves 4-6 people

Ingredients –

2 Tbs – Clarified Unsalted Butter
4 Cloves – Garlic, Thinly Sliced
1 – Shallot, Fine Diced
300g – Swiss Brown Mushrooms, Thinly Sliced
2 Tbs – White Wine (Use a cheap White Wine, I used Chardonnay) Can be substituted for Vegetable Stock or Chicken Stock.
2 Tbs – Curly Parsley, Chopped (Can be substituted for Flat Leaf Parsley)
1 tsp – Thyme, Chopped
400ml – Full Fat Cream (Thickened Cream)

  1. Please please please, STOP WASTING olive oil like this. Olive oil does NOT prevent butter from burning cause simply olive oil does not have a high smoke point and therefore does not protect butter! Instead of wasting two ingredients, butter and olive oil so you don’t “burn” the butter, use clarified butter instead, which is easy to make and has the same high smoke point as most alternative to olive oil, oils like avocado oil, sunflower oil etc.

  2. This is the very first time I have EVER heard curly leaf parsley called "afro parsley" …
    I died laughing. So did my afro!
    I never buy that parsley. I always get Italian parsley. I promise you next time I go shopping, I'm going to go in there and ask for some Afro parsley 😂😂😂

  3. I just made this today to put over my steak and mashed potatoes and it was magnificent!!!! However I did use 2xs more garlic, and I added a little chicken broth…. That’s just my recipe!!!

  4. I made this yesterday to go with sirloin steak. It was delicious. Next time I'll use extra garlic (it needs more for me 😊). Any reason why you use shallots over yellow onions? I thought I may try them next time too. Thanks. 😋
