Creamy Shrimp Pasta with Fresh Garlic and Cheddar | Quick and Delicious Dinner Recipe
Ingredients
• 10 oz pasta (fettuccine, linguine, or spaghetti)
• 1 lb shrimp (peeled and deveined)
• 3 tbsp olive oil
• 2 garlic cloves (minced for marinade)
• 2 garlic cloves (minced for sauce)
• 1 tbsp fresh dill (finely chopped)
• 1 tsp salt (or to taste)
• 1 cup heavy cream (20-30% fat content)
• 1 cup shredded cheddar cheese
• Salt and pepper to taste
• Fresh dill or parsley for garnish
Instructions
1. Marinate the Shrimp:
In a bowl, combine the peeled shrimp, 3 tablespoons of olive oil, 2 minced garlic cloves, dill, and 1 teaspoon of salt. Mix well and let it marinate for 15-20 minutes.
2. Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta, reserving about 1 cup of the pasta cooking water.
3. Cook the Shrimp:
In a large skillet, heat a little olive oil over medium heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through.
4. Make the Sauce:
• Add 2 minced garlic cloves to the skillet with the shrimp and cook for about 1 minute until fragrant.
• Pour in the heavy cream and bring it to a boil, then reduce the heat and let it simmer for 3-5 minutes until the sauce thickens slightly.
• Stir in the shredded cheddar cheese until it’s completely melted and incorporated. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
5. Combine Everything:
• Add the cooked pasta to the skillet with the shrimp and sauce. Toss well to coat the pasta evenly with the creamy sauce.
• Season with salt and pepper to taste.
