I thought Irish stew is made with lamb.
What makes that “Irish”?
You can let this simmer on low on stove top in a pot for several hours uncovered and it’ll naturally thicken as the water evaporates.
Be good if you said what herbs you put in there

Yeah I would not put flour and corn starch in it. You have make a roux by adding flour to the oil and veggies as they cook, and then you won't need the slurry.
Or, cook it down to let it thicken as much naturally as it can, then use a slurry to tighten it up if necessary.
But it does look delicious!!

Slow cooker for how long? I couldn't find time on website.
No garlic, celery or cornstarch.. just cook the stew until the potatoes thicken it
