I had smoked skirt steak in Gonzales Texas several years back and I really liked this cooking process. Smoking skirt steaks has a totally different flavor than grilled fajitas.

  2. Great video again, Joe! And those Smokin' Pecan shell pellets are the best! Glad you turned me onto them! Now I need to find some good inside skirt for fajitas! I had a huge smoke ring on my 8# pulled pork! We ate all that, so time for another smoke! 👍

  3. Brother Joe, looking at your plastic cutting board, you can see all that frailed up micro plastic that ends up all in your meat. you gotta ditch those plastic cutting boards. BTW, I'll be trying this recipe out, minus the plastic cutting board 😉

  4. I do a kind of hybrid cook. I get a hot fire, put a stone on the charcoal basket of my Komodo Kamado to do an indirect cook, and put the fajitas up on an elevated grate on top of the top grate. This has the meat high up in the dome, well away from the fire, but the fire is hot. It's a combo smoke/ grill/ roast. The meat cooks thoroughly through like a sous vide, gets plenty of smoke because it takes a while to cook high up there, indirect. and comes out super tender. Consider NOT using store bought ground pepper. It loses all of its volatile organics. Grind it yourself just prior to use. It's enormously more flavorful. Give it a try if you have a kamado.
