Try hanging the ribs the opposite way. So the larger ribs are at the bottom.

That cooker is porcelain coated like old washing machines. Don’t chip it and it will last 50 years thats why it costs 600 bucks.
How long does the meat stay good?
I hope that drum was pre seasoned. Looks awfully new to put meat in. Anyhow she's a beauty. Cheers
