Never add more flour when making dough. Stick to the percentages.

Wow you like bread way over fermented if I leave mine mor then 3 hours it over ferments golly 8 hours!

Recipe
Artisan bread 🍞
430g all purpose flour
2 tsp salt (6g)
1/4 spoon active dry yeast (I put more like 1-2 tsp)
374g water
Leave it covered on wood or a table cloth (no cold surfaces) cover with with film plastic
5-8h
Heat the oven 230 C or 445F (for 30 min)
If no Dutch oven you have options here:
How to Make Crusty Bread Without a Dutch Oven – Life As A Strawberry
Put 2 tbsp flour on counter
Add the dough to the flour surface
Add more flour on top
Fold it over 4 times
Put in the oven for 30 min
Uncover (if using remove water tray)
Continue baking for 15 min or until golden

I’m having a situation where I’m following the recipe, but when I mix it’s not smooth like yours. It starts out really shaggy so I add a little bit more water and that doesn’t seem to help.
