Enoki Beef Rolls
• 1 package of thinly sliced beef
• 1 pack of enoki mushrooms
• ½ small yellow onion, sliced
• 2 large eggs
Sauce
• 1 cup dashi broth (1/2 tsp Hondashi powder mixed into 1 cup of hot water)
• 2 tablespoons mirin
• 3 tablespoons soy sauce
• ½ tablespoon sugar
• ¼ teaspoon black pepper
Garnish
• 1 stalk green onion, diced
• 1 tablespoon sesame seeds

My wife and I make these. They’re great! Only thing is, we just hard sear the meat and just thin slice the onions (uncooked). With beef fond in the pan, we then cook the liquid and reduce so we can drizzle the sauce to our preference. We usually omit the egg.
