Good Day Chef ๐งโ๐ณ, Perfect temperature ๐ก๏ธ MMM. I also like to put veggies under a roast. I usually put a Meirpoix but leave the celery and carrots whole (split the carrot if thick) with thick onion slices and a few cloves of garlic ๐ง. As the roast cooks it will infuse the veggies into the drippings. I do lightly score the roast.
