Rustic bread is generally lean, for example just flour, water, salt, and yeast. The steaming that we use when baking rustic breads also makes for a crisper crust. The Brooklyn Brothers will demonstrate this technique as well.

• 3 & ½ cups of All-purpose flower
• 1 tsp. sea salt
• 2 tsp. active dry yeast
• 1 & 1/2 cups of warm water
Olive Oil Dip
• 1 c. Extra Virgin Olive Oil
• 1TBSP of Fresh Garlic (chopped)
• 1 TBSP Italian Parsley (chopped)
• TBSP of Fresh Basil (chopped)
• 1 tsp. Fresh Rosemary (chopped)
• 1 tsp. of Crushed Red Pepper
• ¼ tsp. of Salt
• ¼ tsp. Black Pepper

Everybody on Youtube who does a bread recipe and puts plastic wrap over the boal while the dough rises also covers that with a towel. What is the function of the towel?
I notice as the mixer is going some time lapse happens – are you adding any water or scraping then starting the mixer again – my dough did not incorporate together well with the hook

Thank you for this video! I've been working on my New York style pizza for the last few months and I'm making great progress but I've never made a loaf of bread in my life. I found with the pizza dough changing the speed after the first two to four minutes to go faster made it look like your pizza dough and easier to handle and work with. Do you keep it on low the whole time and how many minutes mixing with the KitchenAid I've got the same machine as yours. Thank you and here's hoping for a happy New Year and peace on Earth. Cheers!

I made homemade butter yesterday so I am going to make this bread tomorrow to go with my homemade meatballs that I made 2 weeks ago that I took out of the freezer today! I'll let you know how I did.
