Ingredients List
1 Kg boneless, skinless chicken thighs, chopped
1 tablespoon browning sauce (optional)
2. 5 tablespoons curry powder
1 teaspoon smoked paprika
2 teaspoons garlic powder
2 tablespoons olive oil
1 medium onion, diced
1 large carrot, diced
1 bell pepper, sliced
1 scotch bonnet pepper or 1/2 teaspoon chili flakes (for milder spice)
400 ml chicken stock (2 knorr stock cubes)
240 ml coconut milk
2 potatoes, diced
1 teaspoon thyme
1/2 Tsp Salt
1/2 Tsp Black Pepper
2 Tsp dark brown sugar

i made some browning sauce in a clean baked bean tin on the stove. tastes sort of bittersweet caramely. dunno if its supposed to taste like that though 😁
Al! Don't use extra virgin olive oil! It's smoking temp is a lot lower than standard olive oil and can bring a harsh burn to curries!
