Thanks so much for this recipe Natasha. I made this for my wife and I this evening for dinner and we both loved it. We tend to like things on the spicier side so I added one finely chopped fresh jalapeno and a small can of diced fire roasted green chiles. Otherwise, I did it exactly per your recipe. It’s just the two of us, so a full batch of this will give us three nights of dinners. You can’t go wrong when something tastes this delicious and saves on the budget, too. If we were still feeding our kids, this would be a life saver. Edit: And by the way, we are loving your cookbook!
Put the onion in the refrigerator a couple of hours before you chop it.

Made this recipe tonight. It was delicious, I used beef broth instead of chicken broth . I didn’t have any Black beans so I used some red peppers. It turned out fantastic.

Onion cutting tips:
Use a sharp knife as dull knives tend to break the onion structure releasing the chemical that makes your eyes water
Don’t remove the root
This would be great burrito stuffing
