I would leave out the pomegranate because of the seed. Don't like goat cheese. Other than that, it looks great.
Would half sweet potatoe and half normal potatoe also work for this dish ?

My husband ended up making this recipe for our Christmas party and it was a big hit. He omitted the cheese and marinated the pork tenderloin since we had an extra one 😀. Everyone thought that pomegranates were a very festive touch 😋
