PSA: DO NOT use fresh pineapple juice, the enzymes in it’ll break down the meat into inedible slop. Use the bottled or packaged pineapple juice that has been heat treated (the enzymes are denatured). Found this out the hard way 😢

1/2 – 3/4 cup sugar
5 cloves garlic
2 tbsp soy sauce
2 tbsp vinegar
1/2 cup pineapple juice
15 – 20 drops red food coloring
1.5 tbsp kosher salt
1 tbsp black pepper
marinate for 2-3 days

This is "TOCINO", Filipino style. We call sweet pork "tocino" regardless of the cut, so don't be saying this is "bacon" in Spanish, in Mexico or whatever part of the world you are.
If that bacon is tocino for you then so be it, we are not saying otherwise but tocino to us is THIS.
