Hmm, I cook fish in a little oil and water, but on low heat and with a lid. I would never crank the gas flame up so high it went around the sides of the pan, anyway, for cooking anything, let alone something with oil in it. We do keep a fire extinguisher in the kitchen.

Keep a lid, fire blanket, and fire extinguisher in the kitchen (or very close by) if the fire gets out of hand.
I believe kitty litter also works (if you’ve got a cat you’ve got a bunch of litter).

I had a massive flare up from a pot of boiling oil I heated up to make french fries, it started igniting the air because the fries weren't dried well, I decided to go with the smother method by putting the lid on, BEEG BADDA BOOM mistake, at first it was cool, but when I took the lid off to check the flames reached the ceiling, I panicked threw the pot and oil in the bathtub, turned the water on, long story short the 15 firemen all had a good laugh
