  1. Beef chaap bhuna
    Ingredients:
    1kg beef blade cut w/w out bones.
    2tosp ghee
    2 cinnamon, 2 cardamom, 2 cloves, 2 bay leaves
    3 large onions sliced
    1tsp ginger garlic paste
    Spice mix paste: 1tsp white mustard, 1/2 tsp black mustard, 7 almonds, 2tsp raisins, 1 cardamom, 2 little cinnamon, 1 small mace, 1/2 nutmeg, 1tsp poppy seeds, 2 large dried chillies, 2tbsp fried onion. Blend into a smooth paste with some hot water.
    1tosp chilli powder
    1/2tsp turmeric powder
    1/2tsp coriander powder
    1/2tsp cumin powder
    1tsp gorom moshla powder
    Salt to taste
    5-6 fresh green chillies
    2tbsp ketchup optional.
    Cooking method:
    In a pan add ghee, whole spices, sliced onion.
    Cook until brown. Add ginger garlic paste and spice mix paste. Mix well. Add some water and cook until oil separate. Add all the powdered spices. Mix well. Add some water so it doesn't burn. Add the beef chaap pieces. Add salt. Cook on high heat for 5-7min. Add 4 cups of water.
    Cover and cook on high for 20-30min. Then on medium to low heat for an hour. Add water if needed. As it cooked down the meat, the sauce will get darker in color and thickened slightly. Add some green chillies, tomato ketchup at this point.
    Check salt and spice level. Simmer until oil seperates and sauce super rich and decadent.
