Great to see the fantastic Lisa again. Such a great presenter. The sous vide poached eggs should win a Nobel. I've cooked them 2 dozen times, in big batches, and they're always perfect.

I can steam 8 eggs in my rice cooker, uses @ 1/2-3/4 c water. Select time for # of eggs and degree of cooking= perfect soft boiled or hard boiled eggs every time, and the hard boiled all shell in a snap.
Lisa you forget the best advice for cooking eggs.

Lisa…this is the first time I've heard you talk without what appears to be a regimented subject. You are great and have a wealth of information. I look forward to more of Lisa McManuseseses! Regarding wasting water. I just leave the water in my container. I use it every other day so I don't have to fill, only top it off. There is always someone that wants to rain on the sous vide parade

I found that it's a good idea not to reduce heat too quickly. The cold eggs, basket, and lid sucks up a lot of heat. Now I wait a bit before lowering the heat. Also a lot of ice is melted during the cool down and extra ice is needed during the shake.

The comment about the waste water may live in an arid climate (We've been in a drought for more than 20 years in Vegas). But, if you're in Cambridge MA, or Tampa FL, that water may not seem so wasteful.
Starting with hot tap water is a great idea.
To: whoever wrote the "wasteful water" question.
I'll bet you're the same person that gets mad when someone runs a faucet while brushing their teeth, aren't you? Then you scarf down a double-quarter-pounder for lunch without concern for the 600-1000 gallons of water just to make the meat patties.
