Why do you cook the chicken skin down on the simmer? I thought it would make more sense to do it with the crispier part of the chicken skin up to get a harder glaze at the bottom / not to overdue the top). What’s the reason you do it that?

What kind of sugar is that? I don't think its regular sugar because it has a different texture
I just found this recipe this morning and just used it for a couple of chicken I had in the refrigerator and was trying to figure out what to do with them. It was great and I’ll be doing this again.
