Ingredients for Firecracker Chicken Recipe:

(Tsp-Teaspoon; Tbsp-Tablespoon)

– Boneless Chicken – 450 gms (1 lb) cut into bite sized pieces

Marinade:
– Pepper powder-1/2 tsp
– Salt- 3/4 tsp
– Egg-1
– Corn flour -2.5 tbsp
– Oil-1 tbsp

Firecracker Sauce:
– Sriracha sauce- 4 tbsp
– Sweet Chilli sauce – 4 tbsp
– Soy sauce -2 tsp
– Honey -2 tbsp
– Rice Vinegar-1 tbsp
– Sesame oil- 1 tsp

Tempering:
– Garlic chopped -2 tsp

Other Ingredients:
– Red Chilli Flakes-2 tsp
– White Sesame Seeds-1.5 tsp
– Spring onion greens- 3 tbsp
– Oil- 4 tbsp + 2 tbsp
– Butter- 1 tbsp

Preparation:

– Cut the chicken breasts to one inch flattish pieces.
– Marinate with the items specified above and set aside for around 15 mins.
– To prepare the Firecracker Sauce take a small bowl and add all the items specified above. Mix and set aside.

Process:
– Heat 4 tbsp oil in a pan and place the marinated pieces side by side. Fry on medium heat for 1 min and then flip on the other side. Continue to fry on medium heat for a minute and then stir and fry on medium heat for another 3 mins. (Total frying time around 5 mins)
– Remove onto a plate and repeat for the balance.
– Now take a wok and heat 2 tbsp oil.
– Add the chopped garlic and stir fry for around 30 secs on medium heat.
– Now add the prepared Firecracker Sauce and cook on medium heat for a minute till it thickens and bubbles appear.
– Now add the fried chicken pieces, butter and the red chilli flakes and stir fry on medium high heat for around 2 mins till it totally coats the pieces.
– Now sprinkle the white sesame seeds and chopped spring onion greens. Stir fry on high heat for another 1 min.
