Starting solids is now easy! Here’s a quick and easy recipe to whip up the most delicious & healthy First Tomato Pasta for your baby. Tomatoes are high in vitamin C, a vitamin that supports immune health and assists with fighting sickness like colds and the flu.
Here’s the step by step guide as to how you can make this amazing recipe at home.
Recipe:
Ingredients
• 2 Cup or 150gm – Fusilli Pasta
• 4 tbsp. or 2 Cubes unsalted butter
• 1 onion (finely chopped)
• 2 garlic cloves (1 tbsp. minced)
• 1 Cup Tomato Puree
• 1 cups chicken stock
• Salt to taste
• black pepper or to taste
• 1/4 cup Mozzarella Cheese
Instructions
1. Tomato Puree Instructions:
• Begin by scoring the tomatoes with an X on one end. Place the tomatoes in boiling water and cook for 1 to 2 minutes, until the skins start to peel back.
• Plunge the tomatoes into an ice-cold water bath and peel the tomatoes.
• Transfer the tomatoes to a cutting board and remove seeds.
• Blend in the blender to make smooth puree.
2. In a large pot, bring water to a boil. Cook pasta with olive oil & salt until cooked. Approximate cooking time: 10 to 15 minutes.
3. Heat a pot over medium heat. Melt in 4 Tbsp. butter then sauté onions until softened. Add minced garlic and sauté another minute.
4. Add chopped carrot, pour the tomato puree.
5. Add chicken stock, salt and black pepper. Bring to boil then reduce heat, partially cover and simmer 10 minutes.
6. Blend for paste – use hand blender in the pot or in a blender machine.
7. Fold in boiled pasta and mozzarella cheese.
8. Garnish with basil, if desired.
