Looks lovely John . I will have to give this a try. I never thought of doing fish in a wok ,I usually do it in the basket and get the batter stuck to it . I am from Hull and we have a local delicacy called patties which are essentially mash potato mixed with sage and then battered like the fish ,this would be great in the wok too. Thanks !!

Hello John, I love learning especially when it comes to recipes. I make my batter with flour, soda water and a pinch of salt. What is it that adding baking powder, cornflour and tumeric especially as it has no distinctive taste, makes the batter better? โค
Looks great, as you said you can have mushy peas if you like. however, i would smother the peas in a brown onion gravy..!! That's my aussie hint from the cook..!!
As I have understood it, fries are smaller and chips are thicker.

Hi, in most chip shops, now scraps or batter is not available in the northeast, due to health and safety.
Thank-you John I've been waiting for this for ever. My hubby and I have just returned home to NZ from a 3 month holiday in the UK visiting my husband's parents and siblings. We had fish n chips many times and they were soooo good. The crunchy bits really add a nice crunch. John – thanks for the video. Random question: Do you know where I can get hold of the large pastry cutters for your steak and peppercorn pie recipe? I can't find a 6.5" diameter cutter anywhere (based in the UK). Might just have to buy a roller cutter instead.
You can't get better than homemade chip's.
A few questions, John. Do most fish and chip shops actually sell cod or is it some other type of cheaper fish (many times I'm not convinced). Are they cooking fillets from frozen (usually taste as if the fillet hans't been seasoned). Why is it 9 out of 10 places will sell you insipid, undercooked chips…maybe my memory is inaccurate, but I don't think it used to be this bad. I very rarely eat fish and chips now, because the experience is invariably underwhelming. Thanks
