Good idea re making your own ground meat. I buy beef off cuts at less than half the price of ground beef (mince in AUS) and mince it myself. I control the protein to fat ratios and thereβs no added water or salt. Coco will be a fan of this method too.
I make burritos a lot, I'll have to try this deviation out one night.

If you have a food processor or (preferably) a meat grinder, as soon as chuck is cheaper then ground beef, grind your own. It will burn out your food processor, but if you have a KitchenAid stand mixer the meat grinder attachment is worth it.

I love the idea of making your own ground beef. I get pasture raised, organic beef and it runs about $6.00/pound, Expensive compared to some, but so well worth it to support local farmers! And a pound makes me a week's worth of meals. I will say–having lived in New Mexico–that this a very interesting recipe! And, I actually prefer enchiladas. THOSE are to die for!

If you have the room/ability to buy a 1/4 cow, thats the way to go. Makes a huge difference in price and it tastes so much better than store bought beef that came from who knows where

My mother used to grind her own meat. She bought generic no name steaks when I was younger when they were quite inexpensive. Sheβd course grind them for hamburgers and make her own cheese and onion buns for hotdogs and hamburgers. Fried onions on burger. Oh my goodness. They were so delicious. She just made them for herself and me after my father passed away. She was an amazing cook and homemaker and the best mother and person I ever knew.
