Definitely use a panade for moisture, but, a few minutes under the broiler just for a slightly brown outer crust. Finish cooking in the sauce. Also, I first cook 6 ounces of my meatball mixture in the pan that I cook my sauce in. Makes a huge difference. Meatballs are always tender and the sauce is so flavorful and delicious.
I'm an oven baked fan myself. Roll in panko just before baking, then add them to the sauce for the last 5-10 minutes before serving. The sauce sticks to the crispy panko.
Not the best imo. Unless you want a greasy sauce you need to use extra lean ground beef – which has the least flavor and is most prone to breaking apart. At least use 85/15 beef and pan fry or broil on 2 sides before finishing in the sauce
I’ve done it with sear and no sear, and honestly the searing isn’t worth it. They’re great without the sear! But I do season the meatballs well. Note: they taste even better the next day
If youre searing your meatballs in a separate pan than the one youre cooking the sauce youre defeating the whole purpose of the sear. While its not necessary it does help add flavor if youre not in a time or space crunch

I’ve done it both ways and searing is truly a waste of time. But seasoning the meat and having a very flavorful sauce is a must.
I have to disagree, there's something about putting a char on the outside of meat that causes a maillard reaction giving the meat much better flavor.
This is how I was taught. Way, way more tender than searing or baking

Raw and right into sauce has always made the sauce taste "meaty" in a bad way.

Honestly if you want the browned flavor but too lazy to sear in batches, just bake/broil them and give em a turn half way through.
I've always done meatballs like this minus the bread from day one… Adding bread or breadcrumbs IMO is an abomination…
My dad looks Mexican meatballs similar, drops them into the broth without searing. So yummy

i mix a bit of the sauce into the meat bf searing them but if I am in a hurry, I dont sear them
They fall apart when u cook them like this. The sear crust holds it together. If u want bad Bolognese, do this. Lol. This is terrible advice.
