Quarter and cook to 165. We love fried rabbit. Another great way is cream of mushroom gravy rabbit up to 165 temp and serve with wild rice.
I think that temp is to hot for breast
These rabbits are “Vlaamse reuzen”. Nice rabbits but so big that you MUST brine them with some vinegar otherwise they get very tough.
I used to eat a lot of rabbit and squirrel when I was growing up and hunting with my grandfather. They are both delicious.
I love rabbit. I often cook it low and slow as a stew with carrots, onions, mushrooms, lardons, rosemary and cider. Goes fantastically well with with a creamy polenta. Absolutely delicious…
I have been eating rabbit on occasion most of my life… as I am moving to a more rural area, a rabbit concern is my first choice for a stock animal! I don't like the smell of boiling chicken feathers!

The Navy served rabbit. I wasn't a big fan because it tasted "gamey". Maybe the brine helps tame the flavor.

When my children were young they wanted rabbits as pets
We got 2 of them and they got cute names – Zack and Fluffy
Built a couple of mobile enclosures for them and they spent lots of time outdoors with a protected run,I think that may be the reason they were so tough😂

Rabbit is great, but very lean. The way we mostly cooked it was to sear the pieces and then "braise" it in gravy. But also on sticks over an open campfire. But you're too right: not popular anymore, just like frog legs. In fact, really large bullfrogs can be dressed out like a Cornish game hen…. Nostalgia…..
I'm always using the dutch oven for creating a good rabbit dish. But I'm gonna try your version as well!
