  1. Thanks Jeremy for the review! Can you explain what it looks like under the grate and near the firebox? Is he running some sort of baffle that pushes air up toward the top plate where the water pan holder is? I can't seem to find any info, photos or videos to show what it looks like under the grate? I'm curious if it's wide open to allow smoke and gasses to flow freely out and possibly under the food or is it all forced up and across the grate?

  2. Franklin explains in a video the door "leaks" on purpose to aid convection. It causes the smoke from the firebox to not flow over the top of the meat, but instead spiral around it as the draft comes from the side.
