Fresh Pasta w/ Sausage – Under $9/serving in ~45min

Ingredients/Cost:
1 large sweet sausage link (~.67lb): $4.50 (@butcherboymarket )
1 pack (~1 lb) fresh pasta sheets: $5.00 (@caponefoods )
1 can (28oz) crushed tomatoes: $3.20 (@pasteneusa )
1/2 sweet onion: $0.55
1/3 lemon: $0.45
4 cloves garlic: $0.35
2 oz crumbled feta: $1.25
2 tbsp olive oil: $0.90
1/4 cup flour: $0.10 (@kingarthurbaking )
1/2 tsp crushed red pepper: $0.10
1 tsp oregano: $0.45
4 tsp salt: $0.45

Total cost = $17.30 or $8.65 per serving

Directions (est. time ~45 minutes, serves 2)

1. Separate pasta sheets and dust with flour to prevent sticking. Stack and cut to the proper width to fit pasta cutter. Run sheets through pasta cutter one at a time and set aside. I used the fettuccine attachment for my @kitchenaidusa mixer.

2. Get a pot of water boiling to cook the pasta later on (add 1 tbsp olive oil and 3 tsp salt to the water). Juice 1/3 of a lemon and set aside (my wife wishes I would skip this part, but I like my sauce a bit more on the acidic side). Slice 4 cloves of garlic and 1/2 of a sweet onion.

3. Put a pan on the stove over medium heat and add 1 tbsp olive oil, add the onion, garlic, crushed red pepper, oregano, and 1 tsp salt. Give a mix and then push mixture to one side of the pan to make room for sausage.

4. Remove the sausage casing and separate into about 5 equal sized chunks (they seem to brown better and are easier to break into smaller pieces later on). Add sausage to pan and brown all sides, 3-5 minutes total. Continue to stir onion mixture occasionally.

5. Once sausage is browned, break into smaller chunks. Add the lemon to the pan and scrape up any bits stuck to the pan while combining everything. Once combined, add the can of crushed tomatoes and mix in well. Simmer the sauce, stirring occasionally, for 8-10 minutes and until the sausage is fully cooked.

6. When sauce is nearly done, add the pasta to the pot of boiling water and cook until pasta is al dente (usually a few minutes). Then drain pasta, turn off heat on sauce and add noodles to sauce and combine. Serve with crumbled feta on top.
