  1. Classic aloo ghoshto
    Ingredients:
    Beef/ mutton curry pieces 1.5 kgs
    Potatoes 3 diced
    Onions 3 cups sliced
    2 bayleaves, 3 cinnamon, 3 cardamom, 1 black cardamom
    1tbsp ginger garlic paste
    1tsp cashew, green chillies paste
    1/2 cup mustard oil
    1tsp gorom moshla
    1.5tsp red chilli powder
    1/2tsp turmeric powder
    1tsp coriander powder
    1tsp cumin powder
    Salt to taste
    1-2 whole garlic for garlic lovers
    4-5 green chillies and handful of fried onions.
    Cooking method:
    In a bowl add the meat, add oil, onions, ginger garlic paste, nut paste, whole spices, powdered spices mentioned above, salt and Mix everything very well. Transfer everything into a pan and put it on the stove. Cook for 10-15min on high heat covered and stirring occasionally. This to ensure a nice sear in the beef as well as cooking the onion down a little bit before adding water. Once you see oil seprating add litre of hot water. Cook on medium for about 40min covered. Stir in between. Add more water if necessary. When the meat is 80% cooked add the diced potatoes, garlic, chillies and fried onions. Adjust salt. Cover again and now simmer for another 30min on low.
    Until the gravy thickens and the meat and potatoes are all soft.
    Serve hot with porota, pulao or shada bhaat.
    With some Bengali salad and lemon 🫶✨
