  1. Hi .. I would like to share with you my own recipe of multigrain bread in my Black / Decker machine ..

    225 ml liquid ( I use half milk , half water ) at 90 – 100 F.

    1 tsp vinegar ( I use apple cider )

    2 TBSP. Olive oil or other oil

    2 TBSP Honey (or other sweetener like sugar or molasses)

    ½ – 3/4 tsp salt ( I use ½)

    Flours: ( all my flours are organic )

    1/3 cup rye flour

    1/3 cup whole wheat flour

    1 1/3 cup all purpose flour

    1/3 cup multigrain flour that I make myself, See my mixture below. you can use purchased flours or make your own by grinding down the grain in a Nutribullet or grinder till they become flour.

    1 TBSP chickpea flour ( optional )

    1 TBSP ground flax seeds (optional)

    1 tsp gluten ( I use very little yeast , so I add this ingredient for extra rise )

    1 tsp chia seeds ( optional )

    ¾ tsp yeast ( I don't believe in using much yeast) The yeast I use is Fleischmann's Instant Dry Yeast Vacuum Pack (1 Lb) so good and so very economical, bought in health shop for about $6 which I froze in jars and will last years 🙂 https://www.grocery.com/store/fleischmanns-instant-dry-yeast-vacuum-pack-1-lb

    My own multigrain mix: You only use 1/3 cup of this mixture in the recipe.

    1 cup Barley flour

    1 cup Quinoa flour

    ½ cup Buckwheat flour

    ½ cup oat flour

    1/8 cup cornmeal flour

    I will add 1 cup Spelt to this when I buy it. Experiment with different flours you may like. Check their weights to see which are really heavy that might give you dense loaves and which contain no gluten which will not give you good rise

    Add the ingredients in the order above. Have them at Room temp and I even preheat my Bread machine by starting it up with no ingredients in it and then stop it and reset to GRAIN Cycle for good rise .. Not Basic or anything else. The starting time is 4:10 on my Black and Decker. I leave it set at 2 lbs even tho this only makes a nice 1 pound loaf.

    The most important thing to watch is in the first 5-10 min of mixing. The dough should be a ball , no batter stuck to sides of pan. ( Add 1 TBSP flour at a time to fix ) and the dough ball should not be too hard. ( If so , add 1 TBSp water at a time)

    After the last mix, remove the dough, remove the paddle, can add a few sunflower seeds on top and quickly place back into pan, spread out abit and let it rise and bake.
