Ingredients :
For masala
Roast
Fenugreek seeds – ½ tbsp
Coriander seeds – 9 -10 tbsp
Jeera – 2-3 tbsp
Mustard seeds – 1 ½ tbsp
Carrom seeds ( Ajwain or Oma ) – ½ tbsp
Black Pepper – 1 tbsp
Cloves – 7-8
Kashmiri dry red chilies – 2 hands full ( Approx. 15 – 20 ) Adjust as per spiciness
Cinnamon – 2 sticks of 2 – 3 inches each
Star Anise – 2
Nutmeg (Jaifal) – a small piece
Turmeric powder – 1 tbsp
Tamarind – a lime size
Grind the roasted ingredients into a smooth paste

Pork – 3 KG
Onions – 9-10
Ginger 3 inches
Garlic – 3-5 bulbs
Green chillies – 5 – 6
Bay leaves – 7-8
Add the ground paste
Salt – as per taste
Vinegar
And cook well
