Tried this and sadly failed with a curdled sauce. How do I prevent this in the future? I tried saving it with lemon and a little more water emulsion to no avail.

you can stuff squash blossoms with rice! It's a delicious appetizer. It is called "kabak çiçeği dolması" where I live.
