🐟 Gravlax de saumon 🐟
L’été arrive et quoi de mieux que de faire son gravlax de saumon soi-même avec cette recette facile et rapide .
Ingrédients:
Pour 1 kg de saumon:
4Cs de sucre
6CS de sel
20g de mélange 4 baies concassées ou poivre
50g d’Aneth.
Retirer les arêtes éventuelles à l’aide d’une pince à épiler.
Enduire le poisson du mélange sel + sucre + 4 baies.
Dans un grand plat, mettre une grande feuille de film transparent. Poser le saumon coté peau en dessous, mettre de l’aneth sur le coté sans peau.
Fermer la « papillote » bien serrée.
Poser un poids lourd sur le saumon (boite de pois chiches ou autre). Laisser mariner 48 h au frigo, en retournant le poisson tous les jours (jeter l’eau rendue).
Le jour j, rincez votre saumon et essuyer le avec du papier absorbant pour ôter l’excédent .
Remettez un peu d’aneth fraîche dessus et découper le en fines lamelles (comme un carpaccio).
Déguster nature avec du citron ou bien une sauce appropriée.
