Greek Chicken Quinoa Bowl Ingredients
• 2 boneless skinless chicken breasts
• 3 tsp lemon juice
• 1 tsp ground black pepper
• Salt to taste
• 1 tsp dried oregano
• 1 tsp minced garlic
• 3 tsp olive oil

Salad
• 2 tbsp olive oil
• 1.5 tbsp lemon juice
• Salt to taste
• 1/2 tsp pepper
• 2 tbsp cilantro (substitute parsley or dill leaves)
• 1 small onion finely chopped
• 1 cup cherry tomatoes, cut into halves
• 1 English cucumber, diced

Tzatziki Sauce
• 1/2 cup grated English cucumber
• 1 cup Greek Yogurt
• 2 garlic cloves, minced
• 1 tsp lemon juice
• 1 tsp olive oil
• 1/2 tsp ground pepper
• 1 tbsp finely chopped dill/mint leaves

To Cook Quinoa
• 1 cup quinoa
• 2 cups of chicken broth (or add plain water + salt to taste)

To flavor quinoa
• 1/2 tsp pepper
• 1/2 tsp lemon juice
• Cilantro/dill leaves

For Assembling the bowl (makes 4 bowls)
• Divide quinoa into 4 bowls
• Top it with chicken, salad, cheese, Tzatziki sauce, and lemon wedge
