You can also buy yoghurt makers pretty cheaply and have it do all the work for you, very easy to pop milk and a spoon of yoghurt in the maker and ignore it for a few hours until it tells you it's finished.

Also you don’t need to use the ice bath . You can leave the hot milk for half and our and it will cool down on its own . Use only 1 tablespoon of yogurt to set the entire yogurt and it will not get sour
1. Buy any yogurt, just check ingredients it has a bacteria (such as bifidus) 2. Heat up milk until it reaches 3 sec temp. When you put a finger in the milk its hot but not too hot. And you can tolerate no more than 3 seconds. 3. Pour yogurt into milk. Cover pot with blankets to contain heat. 4. After a few hours – yogurt 5. Add to cloth to drain out to get greek style 6. Got the last drop of yogurt? Reapeat 1-5 7. ??? 8. Profit
Here is how you make it (middle eastern way) Boil the milk if it's straight from the cow and let it cool Once it becomes room temperature and barely warmer than your hand, add a bit of yogurt Mix it in, and wrap the pot a blanket Put it in a safe spot where you wouldn't trample Now you have yogurt If you want the thick type (we call labneh) Strain it through a sheet of cloth

Note the longer it stays the more sour it gets and the better it gets, but if you like it sweet for some reason then make small batches and eat it quickly
my mother has been making yogurt in a big old steel pot since before i was born. just milk, some yogurt from the batch before, and a pot with a lid and a blanket. that's it. you guys don't need yogurt functions or whatever. just a pot, yogurt and milk
Fyi, you can make cheese with this kind of yoghurt, it can be also done with vegan milk,when yoghurt has formed instead of directly putting it in cheese cloth ,pressure cook it for 15 min on low temprature then you can hang it in cheese cloth , now process will be similar to making tofu,if you want creamy cgeese then hang it for 1-2 hours and if you want consistency like processed cheese hang it for sa much time as you can after removing it just add nutritional yeast and salt and let it set in refrigerator overnight.
We put it in a cooler (no ice) and cover the cooler in blankets to let it very slowly cool down and ferment like that. Works every time.
