I love nothing more than a simple, quick, feel good lunch and this arugula salad with shrimp skewers comes together in 20 min. I seasoned the shrimp with @selefina.spices Iberian Infusion blend crafted by Rena from @agirlandaspoon which gave it the perfect smokey flavor and paired so well with lemony arugula salad [AD]. ✨Ingredients
20 large peeled shrimps
4 cups baby arugula
1/4 cup shaved parmesan
Fresh dill to taste
1/4 cup pepitas
1/2 cup olive oil
Juice from one lemon
@selefina.spices Iberian Infusion seasoning blend
Salt and pepper
1️⃣ Season the shrimp with salt and pepper and a generous serving of the Iberian Infusion spice blend. Add a splash of olive oil and mix well to season the shrimp evenly. Skew the shrimp on metal or wooden skewers (5 shrimps per skewer).
2️⃣ Grill the shrimp on high for 4-5 minutes on the first side and 2-3 minutes on the second side. Remove from the grill.
3️⃣ prepare the salad dressing by mixing the olive oil with salt and pepper and the juice from one a lemon. Chop up the dill.
4️⃣ In a bowl combine the arugula, Parmesan, dill and dressing to taste and toss together.
5️⃣ Split the salad between two bowls and top with pepitas and the shrimp skewers.
