Ingredients:

200 grams all-purpose flour
4 large egg yolks
Instructions:

Measure out the flour and place it on a clean surface or in a mixing bowl.
Create a well in the center of the flour.
Add the egg yolks into the well.
Using a fork or your fingers, gradually incorporate the flour into the egg yolks until a dough forms.
Knead the dough for about 8-10 minutes until it becomes smooth and elastic.
Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes before rolling it out and shaping it into pasta.

Filling:

200 grams fresh spinach, washed and chopped
200 grams ricotta cheese
50 grams grated Parmesan cheese
1 large egg
Salt and pepper to taste
Pinch of nutmeg (optional)
Instructions:

Blanch the spinach in boiling water for about 1-2 minutes, then drain and squeeze out any excess moisture.
In a mixing bowl, combine the blanched spinach, ricotta cheese, Parmesan cheese, and egg.
Season the mixture with salt, pepper, and nutmeg (if using), to taste.
Mix everything together until well combined.
Your spinach and ricotta filling is now ready to use in your favorite pasta dishes, such as ravioli or tortellini.
