Chettinadu Kalkandu Vadai by Masterchefmom:

Chef tips/ Important Notes:
1.Once the oil is hot, reduce it to low flame and fry the vadais. Since it is a sweet vadai, cook on low flame only. Otherwise, outside it will brown quickly and the vadai will not be cooked properly inside.
2.Drain urad dal completely and grind it coarsely in pulse mode. Then add kalkandu and grind. It will release water and the batter will turn out fluffy.
3.Add a pinch of salt to the batter for enhanced taste.
4.Wash urad dal at least 5-6 times and soak along with rice for 2 hrs.

Ingredients:
1 cup urad fal
2 tbsp rice
150 gm Kalkandu/ rock sugar/ mishri ( approx 3/4 cup)
pinch of salt
