He Said This Was THE BEST Pork Adobo 😭



Ingredients:
3lb pork belly (chopped)
1/2 red onion (chopped)
1 bundle garlic (minced)
1 russet potato (skinned/chopped)
1 tbsp whole peppercorn
1/2 cup distilled vinegar
1/2 cup cane vinegar
1 1/2 cup soy sauce
1/4 cup brown sugar

Directions:
1️⃣ Season pork belly with salt and pepper, then brown in oil and remove.
2️⃣ In the same pot, sauté garlic and onion. Add potatoes and cook until browned.
3️⃣ Return pork to the pot. Add peppercorns, both vinegars, soy sauce, brown sugar, bay leaves, and enough water to cover.
4️⃣ Cover and simmer on medium-low for 30 minutes.
5️⃣ After 30 minutes, stir in cornstarch slurry. Cook 10 more minutes, then turn off heat.
6️⃣ Add boiled eggs, mix gently, and serve with rice.

  1. Olive oil is not necessary, just cook the meat on its own oil.. until its toasted and then put the onion and garlic.. then put the soy sauce and vinegar, pepper and bayleaves, simmer for 30 mins then thats the time you put the potato and boiled eggs.. so potato still have its crunchiness.

  2. Great recipe. My way is to lower the heat and let the collagen from pork skin breakdown 45-60mins low heat. That will thicken the sauce and makes every bite melt down your throat. No thickener needed. Vary it up by using a little coconut milk instead of sugar. Excellent technique! Dinuguan next?
