Healthy Gluten Free Banana Bread Recipe

Ingredients:
3 medium bananas, ripe
2 large eggs
1/2 cup (170g) Honey/maple syrup/agave
1/4 cup (60mll) Milk of choice
1/4 cup (60ml) vegetable or canola oil
1 teaspoon Vanilla puree or extract
1/2 teaspoon Almond extract (optional)
1 tablespoon Lemon juice
1½ teaspoons Baking powder
3/4 teaspoon Baking soda
1/4 teaspoon Salt
1/2 teaspoon Cinnamon
1¾ cups + 1 tablespoon (165g) Gluten-free oat flour
1 cup (100g) Almond flour

Directions:
1. Preheat oven to 350°F (180°C). Line a 8X5-inch (20X12cm) loaf pan with parchment paper. Grease the sides of the pan with oil or butter and set aside.
2. In a large bowl, mash the bananas. Add eggs and whisk until combined. Add honey/maple syrup, oil, yogurt, vanilla and whisk until combined.
3. In a separate bowl whisk oat flour, almond flour, baking powder, baking soda, cinnamon and salt.
4. Add dry mixture into wet mixture and stir until just combined.
5. Pour the batter into prepared pan. Top with two banana halves coated with brown sugar. Bake for 45-55 minutes or until a toothpick inserted into the middle of the loaf comes out clean. If after 30 minutes in the oven, the bread turns too brown, cover with foil for the rest of baking.
6. Allow the bread to cool in the pan for 10 minutes, release from the pan and allow to cool completely.

    Direcciones:
    1. Precaliente el horno a 350°F (180°C). Forre un molde para pan de 8 x 5 pulgadas (20 x 12 cm) con papel para horno. Engrase los lados de la sartén con aceite o mantequilla y reserve.
    2. En un tazón grande, triture los plátanos. Agregue los huevos y bata hasta que se combinen. Agregue miel/jarabe de maple, aceite, yogur, vainilla y bata hasta que se combinen.
    3. En un tazón aparte, bata la harina de avena, la harina de almendras, el polvo de hornear, el bicarbonato de sodio, la canela y la sal.
    4. Agregue la mezcla seca a la mezcla húmeda y revuelva hasta que esté combinado.
    5. Vierta la masa en el molde preparado. Cubra con dos mitades de plátano cubiertas con azúcar moreno. Hornee durante 45-55 minutos o hasta que un palillo insertado en el medio del pan salga limpio. Si después de 30 minutos en el horno, el pan se vuelve demasiado marrón, cúbralo con papel de aluminio para el resto del horneado.
    6. Deje que el pan se enfríe en la sartén durante 10 minutos, sáquelo de la sartén y deje que se enfríe por completo.
